Spicy Banana Strudel Bread

  1. 3 ripe bananas ½ C vegetable oil 1 C sugar 2 eggs, beaten 1 ½ tsp cinnamon ½ tsp ground cloves 2 C all purpose flour 1 tsp baking soda ½ tsp baking powder Strudel ½ C brown sugar ½ C flour ¼ C butter, softened 1 tsp cinnamon ½ tsp ground cloves
  2. Preheat oven to 325°. Mash bananas, set aside. Mix together strudel ingredients in small bowl with a pastry blender or fork. Should have shape of a small pea and set aside.
  3. Beat together oil, sugar, and eggs until fluffy. Add mashed bananas, cinnamon and cloves and stir. Sift together flour, baking soda and baking powder. Add dry ingredients gradually to banana mixture, stirring until well blended.Divide batter evenly into 3 well greased 7 ½ x 3 ½ x 2 pans. Spread strudel mixture evenly on top of the batters and press gently into the batter. Bake 45 minutes or until wooden pick inserted in center of each loaf comes out clean. Let rest 5 minutes before turning out on wire rack. Cool completely.
