Bass Cottage Inn Ricotta Banana Pancakes: Breakfast-Brunch

Ingredients:

  • 1 cup All purpose flour

  • 2 tablespoons sugar

  • 1 1/4 teaspoons baking powder

  • 1/4 teaspoon freshly ground nutmeg

  • pinch salt

  • 1 1/3 cups whole milk ricotta cheese

  • 3/4 cup milk

  • 4 egg yolks (save whites for next step)

  • 2 ripe bananas

Step 1:

Heat griddle to about 375F. Combine the dry ingredients (flour, salt, baking powder, nutmeg and salt) in a medium size mixing bowl and stir to combine.

Step 2:

Combine the liquid ingredients in large mixing bowl. Save the egg whites so you can beat them separately.

Step 3:

With electric mixer using whisk attachment (or hand whisk), beat the eggs whites until they form soft peaks. Do not overwork or the egg whites will break down.

Step 4:

Add dry ingredients to ricotta mixture and lightly combine, add egg whites and fold into your batter.

Step 5:

Drop batter by spoonfuls and turn when the edges are set and the bottom is nicely browned. Enjoy with warm Maine maple syrup and sweet sausage for a flavorful memory of your visit to The Bass Cottage Inn, Bar Harbor.
