Pumpkin Muffins: Breakfast-Brunch

Servings: 60

Prep time:30 minutes

Ingredients:

  • 6 cups Sugar

  • 2 cups Canola Oil

  • 3 teaspoons Vanilla

  • 1 teaspoon Clove

  • 3 teaspoons Salt

  • 3- 15OZ cans Pumpkin

  • 1 1/3 cups water

  • 8 Eggs

  • 7 cups Flour

  • 2 teaspoons Cinnamon

  • 1 teaspoon Ginger

  • 4 teaspoons Baking Soda

Step 1:

Mix all Dry ingredients together

Step 2:

Beat eggs first then add to dry ingredients

Step 3:

Add pumpkin, water and oil

Step 4:

Bake for 20 minutes at 350 degrees in a commercial oven. They may need an extra 5 minutes in your home oven.

Step 5:

They can be frozen if you bake them in foil baking cups only. Defrost and heat up for 10 minutes at 350 degrees
