Pumpkin Muffins

Ingredients

  • 6 cups Sugar
  • 2 cups Canola Oil
  • 3 teaspoons Vanilla
  • 1 teaspoon Clove
  • 3 teaspoons Salt
  • 3- 15OZ cans Pumpkin
  • 1 1/3 cups water
  • 8 Eggs
  • 7 cups Flour
  • 2 teaspoons Cinnamon
  • 1 teaspoon Ginger
  • 4 teaspoons Baking Soda

  1. Mix all Dry ingredients together
  2. Beat eggs first then add to dry ingredients
  3. Add pumpkin, water and oil
  4. Bake for 20 minutes at 350 degrees in a commercial oven. They may need an extra 5 minutes in your home oven.
  5. They can be frozen if you bake them in foil baking cups only. Defrost and heat up for 10 minutes at 350 degrees
