Step 1:
Preheat oven 375
Step 2:
3 cup flour 2 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon kosher or coarse salt 8 tablespoon butter (1stick), soft, at room temp 1 cup vegetable shorting 2 cups oatmeal 1 cup buttermilk 1/ 2 cup sugar Any combination of or all.... 1/2 cup raisin 1/2 crystallized ginger 1/2 cup diced apples 1/2 cup diced pears 1/2 cup diced fresh peaches 1/2 cup toasted walnuts
Step 3:
In a medium bowl, thoroughly mix flour, baking soda, baking powder, salt and sugar. Then work in the butter and shortening with pastry knives or with hands until the mixture has the texture of oatmeal. Stir in the oats and any of the nuts and fruits you choose. Add buttermilk, mixing just enough to moisten. Cut into two sections. Turn out onto floured surface and knead lightly for 7-8 turns
Step 4:
Pat the dough out into a circle about 7-8 inches in diameter. Cut into 8-10 equal wedges. Sprinkle with sugar. Bake on ungreased cookie sheet in preheated to 400 for 15-20 minutes
