Artichoke Omelette

Ingredients

  • 2 cups Salsa
  • 2 cans Artichoke Hearts (chopped)
  • 1 cup Parmesan Cheese
  • 1 cup Jack/Cheddar cheese blend
  • 2 cups Sour Cream
  • 15 Eggs

  1. Pre-heat oven to 350 degrees. Spray 10x15 caserole with non-stick spray.
  2. Spread salsa on bottom of dish, top with jack/cheddar cheese blend.
  3. Layer artichokes and then parmesan cheese.
  4. Mix sour cream and eggs together and pour over other ingredients.
  5. Bake for 50 minutes.
