Artichoke Omelette: Breakfast-Brunch

Ingredients:

  • 2 cups Salsa

  • 2 cans Artichoke Hearts (chopped)

  • 1 cup Parmesan Cheese

  • 1 cup Jack/Cheddar cheese blend

  • 2 cups Sour Cream

  • 15 Eggs

Step 1:

Pre-heat oven to 350 degrees. Spray 10x15 caserole with non-stick spray.

Step 2:

Spread salsa on bottom of dish, top with jack/cheddar cheese blend.

Step 3:

Layer artichokes and then parmesan cheese.

Step 4:

Mix sour cream and eggs together and pour over other ingredients.

Step 5:

Bake for 50 minutes.
