MJ’s Veggie Benedict Scramble

Ingredients

  • Handful of spinach
  • 1 medium zucchini, diced
  • 1 English muffin, split
  • 4 Eggs
  • 1/2 cup hollandaise
  • Thinly sliced scallions
  • 1/2 avocado

  1. Sauté zucchini and spinach over medium heat until tender. Scramble eggs and add to pan. Cook to a medium/soft scramble. Meanwhile, toast English muffin and place half on each plate. Divide egg mixture between muffins. Top with hollandaise (either homemade or Knorr’s has a terrific and easy version,) scallions and sliced, fanned avocado. Yummy!
