Kevin's Apricot White Chocolate Cookies: Dessert

Servings: 12

Prep time:30 minutes

Ingredients:

  • 1/2 cup sugar

  • 1/2 cup brown sugar

  • 1/2 cup softened butter

  • 1 egg

  • 1 teaspoon vanilla

  • 1 1/4 cup all purpose flour

  • 1 cup rolled oats

  • 1/2 cup coconut flakes

  • 1/2 teaspoon salt

  • 1/2 cup vanilla baking chips

  • 1/2 cup coarsely chopped dried apricots

  • 1/2 cup coarsely chopped walnuts

Step 1:

Combine all ingredients.

Step 2:

Drop onto baking sheet covered with aluminum foil, about 2T. per cookie.

Step 3:

Bake at 375 for 10 minutes.
