Hacienda Vargas Pumpkin Pancakes

Ingredients

  • 1/2 can Pumpkin puree
  • 1 can Evaporated Milk
  • 2 Eggs
  • 2 tablespoons Vegetable Oil
  • 1 teaspoon Vanilla
  • 1 teaspoon Cinnamon
  • 1 teaspoon Allspice
  • 2 tablespoons Brown Sugar
  • 2 cups Bisquick
  • 1/8 cup Roasted Pinions (or nut of choice)

  1. Combine all ingredients except nuts
  2. Mix well
  3. Pour approximately 1/2 cup batter onto greased medium hot griddle
  4. Sprinkle with roasted pinions (or nuts or choice)
  5. Cook until dry around edges, starting to bubble, then turn once. Serve immediately with honey butter and syrup.
