Stuffed French Toast

Ingredients

  • 1 Brioche Bread
  • 8 Eggs
  • 1/2 cup Orange Juice
  • 1/2 cup Milk or half & half
  • 1 orange Grated Orange Zest
  • 1 lemon Granted Lemon Zest
  • 1 teaspoon Vanilla
  • Pears, Apples, Peaches or Strawberries
  • Chopped Walnuts
  • 1 teaspoon Salt

  1. Break eggs and add all wet ingredients and zezts to egg mixture and beat thoroughly until slightly frothy.
  2. Cube apples or pears, add sugar and then carmelize in butter in frying pan until golden. If using strawberries, slice them, add sugar to taste but do not need to cook. Chopped walnuts are optional.
  3. Slice Brioche bread into slices about 1/2 inch thick. Dip slice of bread in egg mixture and place on griddle. Spoon fruit mixture on bread that is on griddle then dip the second slice in egg mixture and then cover piece that is browing on griddle.
  4. Flip french toast carefully and brown other side. Place french toast on cookie sheet with rack on it after it is browned until time to serve.
  5. Sprinkle french toast with powdered sugar and serve with maple syrup on the side
