Irish cheddar biscuits

  • all purpose flour
  • shredded Irish cheddar cheese
  • Baking powder
  • salt
  • Ground black pepper
  • chilled unsalted butter cut into 1\2” cubes
  • whole milk

  1. Preheat oven to 400.
  2. Combine flour, baking powder, salt and pepper in a large mixing bowl until well blended. Add butter and rub in gently with fingers until well blended then add cheese and mix thoroughly. Gradually add 1 cup milk with fork until moist clumps form (adding more milk by tablespoons if too dry). Gather dough into a ball. Press out on a lightly floured surface to make an 8 inch round, about 1” thick. Using a 2”round cutter, cut out biscuits. Press out dough until all is used. Place parchment paper on a large baking sheet and arrange biscuits. Place in oven and bake until light golden color and centers are cooked, about 15 minutes.
  3. Place in a towel lined basket and serve warm. Yields about 12 biscuits
