Cinnamon - Raisin Breakfast Pudding: Breakfast-Brunch

Ingredients:

  • 1 Loaf Whole Wheat Cinnamon Raisin Bread

  • 1/4 cup Butter, melted

  • 8 Eggs,

  • 3/4 cup Sugar

  • 3 cups Whole Milk

  • 1 cup Half & Half

  • 1 tablespoon Vanilla Extract

  • 1 tablespoon Cinnamon

  • 1 teaspoon Nutmeg

Step 1:

Trim the end pieces from the loaf of bread. Arrange slices of bread in greased baking dishes (one 9 X 13 and one large loaf pan). in a bowl, beat together 5 whole eggs plus 3 egg yolks.

Step 2:

Whisk in the remaining ingredients. Pour evenly over the bread slices. Cover with foil and refrigerate overnight.

Step 3:

Preheat oven to 350 degrees. Drizzle with the melted butter and bake, covered, for 45-60 minutes or until cooked through. Dust with powdered sugar and top with fresh berries.
