Sweet Potato Hash Browns: Breakfast-Brunch

Prep time:15 minutes

Ingredients:

  • 2 large sweet potatoes, grated

  • 1 large onion, diced

  • 3 tablespoons butter

  • to taste salt and pepper

Step 1:

Melt the butter in a medium sized frying pan. Add the onion and sweet potatoes. Cook on medium high heat until browned on both sides. Serve hot with your favorite omelet or eggs.
