Pannekoeken: Breakfast-Brunch

Ingredients:

  • 1 large Apple, peeled and thinly sliced

  • 1/2 teaspoon Cinnamon

  • 1 1/2 tablespoons Sugar

  • 3 Eggs

  • 1/2 cup Milk

  • 1/2 cup Self-rising flour

  • 1/4 teaspoon Vanilla

  • 1/8 teaspoon Ground Nutmeg

  • 2 tablespoons Butter

Step 1:

In small bowl or shaker, combine cinnamon and sugar; mix well. Spread apple slices in single layer on plate. Sprinkle with cinnamon mixture. Cover and let stand at least one hour.

Step 2:

Preheat oven to 425 degrees. In mixing bowl combine eggs, milk and vanilla. Beat well. Add flour and nutmeg, mixing well. Set aside.

Step 3:

Place butter in glass pie pan. Place in oven to melt butter. When butter is melted, spoon cinnamon apple mixture into bottom of pie pan in a single layer. Return to oven until apples are cooked through, 7-10 minutes.

Step 4:

Pour batter over hot apple slices and return pan to oven. Bake approximately 15 minutes longer or until Pannekoek is puffed and lightly browned.

Step 5:

Serve immediately with syrup, powdered sugar, or whipped cream toppings.
