Cream shortening and sugar. Add egg, vanilla, nuts, and apples. Mix well. Add flour, cinnamon, nutmeg, and salt. Dissolve baking soda in hot water and add to batter. Mix well until blended.
Bake in greased 9 x 9 inch pan at 350 degrees for 35-40 minutes.
Note: This recipe can be doubled using a 9 x 13 inch pan and can be served slightly warm with whipped cream. This is a nice breakfast cake and is especially good in the fall and winter when fresh fruit is not available.
A wonderfully warm cinnamon aroma permeates the house as it bakes.
