Door County Cherry Muffins

Ingredients

  • 4 cups flour
  • 2 cups sugar
  • 2 tablespoons baking powder
  • 1 teaspoon cinnamon
  • 3 cups frozen & rinsed Door County cherries
  • 1 cup butter (melted)
  • 1 cup milk
  • 4 eggs
  • 1 teaspoon vanilla
  • TOPPING
  • 1 cup flour
  • 1/3 cup soft butter
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon

  1. Preheat oven to 425 degrees.
  2. Combine dry ingredients and blend. I a separate bowl, toss 1 tbs. of dry ingredients with cherries.
  3. In a large bowl, mix butter, milk, eggs and vanilla. Then add dry ingredients and stir until well moistened. Stir in cherries.
  4. Spoon batter into muffin tins to about 3/4 full and sprinkle with topping mixture. Bake at 425 degrees for 15-20 minutes. Makes about 2 dozen muffins.
  5. Optional topping - sprinkle with suger.
