Baked French Toast Wedges: Breakfast-Brunch

Ingredients:

  • 4 Diced English Muffins

  • 1/2 cup Sugar

  • 3 Whole Eggs

  • 2 1/2 cup Milk

  • 1 tablespoon Cinnamon

  • 1/2 teaspoon Vanilla

  • 2 tablespoons Butter or Margarine

Step 1:

Melt Butter in microwave for 1 minute. Spray 10 inch pie plate with non-stick cooking spray.

Step 2:

Cut or tear English muffins into 1 inch cubes. Arrange muffins in a single layer in dish.

Step 3:

Beat together eggs, cinnamon and sugar. Stir in vanilla, mixing well. Add half and half or milk and melted butter, mixing well. Sprinkle nutmeg over entire mixture.

Step 4:

Cover and refrigerate overnight or bake immediately. Bake in 350 degree oven for 40-45 minutes. Cool 10 minutes.

Step 5:

Cut into 1/4 wedges and serve with maple syrup or fresh fruit toppings.
