French Toast with Apples Sauteed in Rum: Breakfast-Brunch

Servings: 4

Ingredients:

  • 2 eggs

  • 1/3 cup milk

  • 1 teaspoon sugar

  • 1/2 teaspoon cinnamon

  • 4 slices french bread, cut 1 inch thick

  • APPLE TOPPING

  • 6 tablespoons unsalted butter

  • 1/4 cup sugar

  • 2 granny smith apples, peeled, cored and cut into 1/2 in. slices

  • 1/4 cup rum

Step 1:

French Toast: Whisk together eggs, milk, sugar & cinnamon. Arrange bread slices in 9-in baking dish. Pour over egg mixture, turning to coat. Let stand for 20 minutes.

Step 2:

Apple Topping: Melt 4 Tablespoons butter in skillet. Mix in sugar. Add apples & cook until syrup turns deep golden brown, about 20 minutes. Add rum & bring to boil. Set aside.

Step 3:

Melt remaining butter in skillet. Add bread slices and cook until golden on both sides.

Step 4:

Arrange bread slices on plates. Bring apples to a simmer then spoon apple mixture over the french toast. Serve warm.
