Tropical Breeze Coffee Cake

  • 1 box Blueberry Bread Mix
  • 3/4 cup Crushed Pineapple, drained
  • 1 cup Coconut, shredded
  • 2 tablespoon Sour Cream
  • 3 tablespoon Oil
  • Orange Juice (replace liquid called for in recipe)

  1. Mix blueberry bread according to instructions on the box, replacing water or milk called for in recipe with orange juice
  2. Add the crushed pineapple, coconut, sour cream and oil to mixture. Stir to blend.
  3. Pour into greased pan and bake approximately 50 minutes, or until knife inserted in middle comes out clean.
  4. Chill overnight for easier cutting.
  5. Slice into individual slices.
