Hollandaise Sauce: Breakfast-Brunch

Ingredients:

  • 4 large eggs, yolks

  • 2 teaspoons lemon juice

  • 1/8 teaspoon hot sauce

  • 4 teaspoons Water

  • salt

  • freshly ground pepper

  • 2 sticks butter, unsalted

  • fresh parsley, optional

  • scallions, optional

Step 1:

Place a stainless steel bowl over a pot of simmering water, being careful to not let the bottom touch the water.

Step 2:

In that bowl, whisk together the egg yolks, lemon juice, hot sauce, and water until pale yellow in color.

Step 3:

Season with salt and pepper.

Step 4:

Remove the bowl from the pot. Whisking vigiriusly, add the melted butter, 1 tablespoon at a time, whisking until all the butter is incorporated.

Step 5:

Keep warm until ready to serve over the egg, ham, and toasted English muffin. Sprinkle with fresh parsley and/or scallions if desired.
