Hollandaise Sauce

Ingredients

  • 4 large eggs, yolks
  • 2 teaspoons lemon juice
  • 1/8 teaspoon hot sauce
  • 4 teaspoons Water
  • salt
  • freshly ground pepper
  • 2 sticks butter, unsalted
  • fresh parsley, optional
  • scallions, optional

  1. Place a stainless steel bowl over a pot of simmering water, being careful to not let the bottom touch the water.
  2. In that bowl, whisk together the egg yolks, lemon juice, hot sauce, and water until pale yellow in color.
  3. Season with salt and pepper.
  4. Remove the bowl from the pot. Whisking vigiriusly, add the melted butter, 1 tablespoon at a time, whisking until all the butter is incorporated.
  5. Keep warm until ready to serve over the egg, ham, and toasted English muffin. Sprinkle with fresh parsley and/or scallions if desired.
