Westcott Casserole: Breakfast-Brunch

Ingredients:

  • 30 ounces Hashbrowns, frozen

  • 2 1/2 cups Cheddar cheese, shredded

  • 1 Onion, large

  • 1 1/2 pound Sausage

  • 1 dozen Eggs

  • 2 tablespoon Bacon fat

  • 1 tablespoon Paprika

  • 1 tablespoon Worschestershire sauce

  • 1/2 teaspoon Garlic powder

  • to taste Salt and pepper

Step 1:

Preheat oven to 350 degrees.

Step 2:

Heat fat in frying pan. Saute sausage, onion, garlic, salt, pepper, and paprika until cooked. Mix with thawed hash browns.

Step 3:

Spray casserole dish with cooking oil. Spread mixture evenly over dish. Sprinkle half of the cheese over the top. Beat eggs and pour over top. Add the rest of the cheese. Sprinkle with parsley.

Step 4:

Oven bake for 45 minutes or until lightly browned.
