Rolled Bacon and Gruyere Omelet: Breakfast-Brunch

Prep time:25 minutes

Ingredients:

  • 3/4 cup Flour

  • 1 1/2 cup Milk

  • 3 tablespoons Melted butter

  • 3/4 teaspoon Salt

  • 8 Eggs

  • 1 1/2 cups Chopped bacon or ham

  • 1 Small onion

  • 2 cups Shredded Gruyere

  • 1 1/2 cups Chopped fresh spinach

  • 1 tablespoon Dried basil

Step 1:

Heat oven to 350. Line sheet pan with parchment paper and grease generously - let parchment hang over the sides of the pan.

Step 2:

Beat together flour, milk, eggs and salt.

Step 3:

Pour into pan and sprinkle with bacon and onions.

Step 4:

Bake 15 minutes until eggs are set.

Step 5:

Immediately sprinkle with cheese, spinach and basil. Roll up from wide side, using parchment paper to lift omelet. Let stand a few minutes and then slice. VEGETARIAN VERSION: Replace meat with mushrooms, peppers, etc...
