Zucchini Frittata

Ingredients

  • 1 1/2 lbs (about 3 med) Zucchini
  • 2 tablespoons Olive Oil
  • 3/4 teaspoon Salt
  • 3/4 teaspoon Pepper
  • 1/2 cup Chopped Red Pepper
  • 1/4 cup Chopped Green Onions
  • 3/4 cup Shredded Parmesam
  • 1 1/2 cups Egg Beaters
  • (Or 12 Eggs)

  1. Wash zucchini thoroughly. Cut off ends, slice lengthwise, then slice in 1/4" pieces (half-rounds).
  2. Saute zucchini in olive oil with salt & pepper for about 3 minutes. Add red pepper and green onions, and cook about 2 more minutes. Vegetables should be just tender but not limp.
  3. Lightly spray 9X13 (or half-size commercial pan) with cooking spray. Add vegetables and cover with 3/4 cup shredded parmesan.
  4. Mix eggs and pour over.
  5. Bake immediately at 325 degrees for 1/2 hour. Or, cover and refrigerate overnight, then bake for 45 min. Cut into six pieces and serve.
