Mash sweet potatoes. Mix the sweet potatoes, brown sugar, water and biscuit mix. Mixture will be very sticky.
Dust countertop or cutting board with flour. Place mixture on floured surface and roll to 1/2 inch thick
Cut with 1 1/2 inch biscuit cutter and place on greased cookie sheet, leaving some space between biscuits.
Bake for 12 to 15 minutes. Cool on rack before storing. For larger biscuits bake 16 to 18 minutes. Biscuits will be moist. Split biscuits and stuff with shaved salty country ham or Virginia ham. One pound of ham will stuff 70 biscuits. These may be served hot or at room temperature.
