Glasbern Cider Vinegar

Ingredients

  • 2 quart Cider Vinegar
  • 1 lb Brown Sugar
  • 1 stick Cinamon Stick
  • 1 Diced Green Apple
  • 2 Sliced Shallots
  • 1 oz Dijon Mustard
  • 2 Egg Yolks
  • 4 cup Blended Oil

  1. Bring to a boil; Cider Vinegar, Brown Sugar, Cinamon Stick, diced apple, shallots -
  2. Simmer and reduce by - half
  3. In a blender combine 2 cups of the cider reduction with the dijon mustard, egg yolks and blend in 4 cups of the oil to create the Cider Vinegar.
