Carriage Corner Oatmeal Pancakes: Breakfast-Brunch

Servings: 6

Ingredients:

  • 1/4 cup sugar

  • 2 teaspoons baking powder

  • 2 teaspoons baking soda

  • pinch salt

  • 4 cups buttermilk

  • 4 eggs, beaten

  • 1/2 cup melted butter or oil

  • 2 teaspoons vanilla

  • 4 cups rolled oats (long cooking)

  • 1 cup flour

Step 1:

Combine all dry ingredients in one bowl and mix. Combine and mix wet ingredients in a bowl. Add liquid all at once to dry ingredients. Stir to blend. Do not over beat. Let stand 45 minutes. Batter will thicken (if too thick, add a little more milk). Cook on hot griddle.
