Lobster Frittata

Ingredients

  • 3 oz diced Lobster Tail meat
  • 2 oz cooked Potatoes
  • 1 oz diced, cooked asparagus
  • 3 Eggs, cracked & whipped
  • 1 oz Gruyure Cheese
  • 1/2 oz Butter
  • 1/2 oz Chopped Roasted Pepper

  1. Saute Lobster meat in butter. Add potatoes, Red Pepper, and ASP. Fold in Beaten Eggs, cook mixture gently, folding eggs when omelet starts to set. Flip top with Gruyure cheese.
  2. Put into 450o oven for 3 minutes or until cheese is completely melted. Enjoy!
