Absurdly large (and intoxicatingly good) breakfast popovers: Bread

Servings: 6

Prep time:60 minutes

Ingredients:

  • 6 eggs

  • 6 tablespoon melted butter

  • pinch salt

  • 2 cups milk

  • 2 cups flour

Step 1:

Beat eggs until foamy.

Step 2:

Whisk in melted butter and milk.

Step 3:

Add 2 cups flour and beat until almost smooth.

Step 4:

Spray 6 custard cups with non-stick spray then fill with batter. Cups should be almost full - about 1/4 to 1/2 inch from the top.

Step 5:

Bake in a preheated 400 degree oven for 50 - 55 minutes. Do not peek until the 50 minutes are up! You may be tempted to check them because they smell so delicious but wait or they may deflate. The name comes from a USA Today article by Laura Bly. She spent the night then had our popovers the next morning. She called them "absurdly large (and intoxicatingly good) breakfast popovers."
