Pumpkin Pie Pancakes

Ingredients

  • 2 cups flour
  • 4 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon allspice
  • 3/4 cup sugar
  • 1 1/2 cups canned pumpkin (fresh, cooked & mashed)
  • 3 eggs
  • 1 cup milk
  • 3/4 cup vegetable oil
  • 1/2 teaspoon vanilla

  1. Mix flour, baking powder, cinnamon, nutmeg, allspice, and sugar
  2. Separately, mix pumpkin, eggs, milk, oil, and vanilla
  3. Combine the dry and wet ingredients
  4. Pour 1/4 cup batter on hot griddle. Cook until bubbles form. Flip and cook other side
  5. Serve hot. Try with sauteed apples or pears. Can be held in 250 degree oven if covered loosely
