Grilled Vegetables with Balsamic and Goat Cheese: Side Dish

Ingredients:

  • 1 Zucchini

  • 1 Eggplant

  • 1 Each, Red, Yellow and Green Pepper

  • 1 Spanish Onion

  • 2/3 cup Olive Oil

  • 1/3 cup Balsamic Vinegar

  • 2 Cloves of Garlic, finely chopped

  • 1/2 cup Crumbled Goat Cheese

Step 1:

Slice Zucchini and Eggplant in long, thin slivers, slice peppers in thick slivers and slice onion in thin rounds.

Step 2:

Put vegetables in large ziplock bag

Step 3:

mix oil, vinegar and garlic, pour into bag, lock and shake

Step 4:

Grill vegetables

Step 5:

serve with goat cheese crumbled on top.
