Blintz Souffle: Breakfast-Brunch

Prep time:10 minutes

Ingredients:

  • 12 (2 boxes) Frozen cheese blintzes

  • 14 oz Egg substitute

  • 1/3 cup Sugar

  • 3/4 cup Orange juice

  • 1 teaspoon Orange or vanilla extract

  • 1/2 teaspoon Ground cinnamon

  • 1 - 2 handfulls Frozen blueberries

  • Pam

Step 1:

Preheat oven to 350 degrees. Spray a 4-quart glass baking dish with Pam.

Step 2:

Place frozen blintzes into baking dish in two rows.

Step 3:

Combine the rest of the ingredients (except the blueberries); blend until smoothe. Pour liquid mixutre over blintzes.

Step 4:

Spread blueberries over casserole.

Step 5:

Bake for 35- 45 minutes until it is a nice golden color and no longer liquid. Serve immediately. Note: this recipe works equally well with the addition of any frozen berries. You can also use apple blintzes by substituting apple or cranberry juice for the orange juice and craisins for the berries.
