Blueberry Morning Glory

Ingredients

  • 1 Egg bread (challah), crust removed
  • 8 oz Cream Cheese
  • 3 cups Blueberries
  • 8 Eggs
  • 1/3 cup Maple Syrup
  • 1 1/2 cups Sugar
  • 2 cups Milk
  • 1 cup Water

  1. Grease a 13 x 9 casserole dish. Rip bread in pieces and arrange half in bottom of dish. Scatter cream cheese on top, then 2 cups of blueberries. Arrange remaining bread on top.
  2. Mix together eggs, 1/2 cup sugar, syrup and milk. Pour evenly over bread mixture. Bake at 350 degrees about 1 hour. Serve with blueberry sauce. (This dish may be prepared the day before, refrigerated overnight, and baked the day you wish to serve it.)
  3. For Blueberry Sauce: In a saucepan, mix 1 cup sugar, cornstarch and water. Cook over moderate heat, for about 5 minutes, stirring constantly, until thickened.
  4. Add remaining blueberries and simmer about 10 minutes, stirring occasionally, until berries have burst.
