In a bowl, combine, flour, baking powder, sugar and salt. In a separate bowl, mix egg, milk and vanilla. Stir both bowls of ingredients together. Add melted butter.
Spray griddle with cooking spray, or lightly oil. Ladle batter onto the hot griddle. Turn when upper side is bubbly and light brown on the edge. Flip and cook until the bottom is lightly brown. Serve plain, with fresh fruit and/or our local maple syrup.
There are many variations to this. We offer our guests plain, blueberry or chocolate chip varieties. One recipe serves 4 guests, 3 pancakes each.
