Breakfast Egg Strata: Breakfast-Brunch

Prep time:1 hr.

Ingredients:

  • 3 -4 cups day old bread torn into 1" pieces

  • 6 eggs

  • 2 cups milk

  • 1/2 cup cheese (see variations)

  • 1 teaspoon dried mustard

  • salt and pepper to taste

Step 1:

Spray 1 qt. baking dish with cooking spray. Line with bread cubes. Top with ingredients of variation chosen.Beat Eggs with milk, dried mustard and salt and pepper. Pour over filling, cover and refrigerate over night.Bake at 350 degrees for 30-40 minutes.

Benedict: 1/2 cup Canadian Bacon (cut into pieces), 4 asparagus spears (cut into thirds), Monterrey Jack Cheese, Serve with Hollandaise Sauce.

Step 4:

Southwest: 1 small can of chopped green chilis, 1 tomatoe chopped, 1 T. fresh cilantro minced, cheddar and Monterrey Jack Cheese

Step 5:

Cheesey Vegetable: 1 tomatoe (chopped), 4 mushrooms (sliced), 1/2 cup baby spinach leaves, 4 asparagus spears cut into thirds, cheddar cheese.
