Belgian waffles gluten free/no trans fats with Strawberry compote

Ingredients

  • 1 cup brown rice flour
  • 1/2 cup white rice flour and 3 tsp baking powder (corn)
  • 1 egg
  • 3 tablespoons unsweetened applesauce
  • 1 cup low fat milk (1%)
  • 1/2 cup strawberries and 1/2 cup water, 1 tsp sugar and cornstarch

  1. Combine all ingredients (except last line-compote ingredients)and let stand for 3 minutes. For a lighter waffle add a little more milk. Heat lightly greased (olive oil spray) Belgian waffle maker. Make waffle per waffle iron instructions.
  2. Compote: Cook water, cornstarch and sugar over medium heat until desired consistency. Stir in strawberries and heat. Serve warm compote over warm waffle.
